Mango Salsa - Prepare first
3 mangoes, cut into chunks • 1 red pepper, chopped • 1/2 red onion, chopped • 1 jalapeño, chopped and seeded • 1/2 bunch cilantro, chopped • juice of 1 lime • 1/2 teaspoon sea salt
In a medium-sized mixing bowl, combine all items, cover and refrigerate 30 minutes.
Coffee Rub - Prepare coffee rub and steaks while mango salsa chills.
1/4 cup dark roast coffee • 1 tablespoon brown sugar • 2 teaspoon fresh ground black pepper • 3-1/2 teaspoon crushed oregano • 1 teaspoon sea salt • 1 teaspoon smoked paprika • 1/2 teaspoon ground coriander • 1 pinch ground turmeric • 1 teaspoon chili powder
Rub Rube's steak of your choice (ribeye, sirloin or New York strip goes well with this rub) generously with coffee rub. Grill to desired level of doneness. Spoon mango salsa over steak. Slice and enjoy.
